The popular local Ghanaian soup; the light soup or the “nkrakra”, prepared by our mothers to eat with fufu or rice can be used to reduce weight with the addition of these vegetables and choice meat or fish:
- Bell pepper; green
The choice of meat or fish depends on you but for health itis better to choose fish, the salmon is the best choice here as it helps in weight loss. Season fish or meat whilst it is simmering on fire cook your tomatoes and onions, you can also cook a small sized green bell pepper to give it flavor. Let it cook for 10-15minutes. Blend them and pour onto the simmering seasoned fish or meat and bring to boil. As the soup cooks, chop the vegetables into chewable or preferred sizes, sit it in ginger water. Place a pan on fire and wait till it is very hot,using the Ghanaian tablespoon ladle water into the hot pan pour your vegetables into it add grated ginger and garlic to it and toss the vegetables. Toss till it is soft but still retains it crunchiness. The soup would have been okay by now, pour the tossed the vegetables into the soup and let it simmer for about 5 minutes. Remove from fire to let it cool. Serve with rice; brown or white, or serve alone. Till next time on the weight watchers guide.
